脂质消化最终是一个界面过程，因为它需要脂肪酶（胃或胰腺）通过界面层吸附到乳化脂滴的油水界面上，以到达并水解油中所含的甘油三酯成游离脂肪酸和单酰基甘油酯6。 图 2 对此进行了示意图。胃脂肪酶与胃中的胃蛋白酶和磷脂竞争油水界面（图2，胃消化）。然后，胰脂肪酶/大肠脂肪酶与胰蛋白酶/胰凝乳蛋白酶、磷脂、胆盐和小肠消化产物竞争。蛋白酶可以改变界面覆盖，防止或有利于脂肪酶吸附，而胆盐具有高度表面活性，并取代大部分剩余的乳化剂以促进脂肪酶吸附（图2，肠道消化）。最终，脂肪分解的速率和程度取决于初始/胃消化乳液的界面特性，例如厚度、分子间/分子内连接以及静电和空间位阻相互作用。因此，监测界面层在消化过程中的演变提供了一个实验平台，以确定影响脂肪酶吸附和脂质消化的界面机制和事件。

格拉纳达大学（UGR）的悬垂滴落设备采用专利技术，即同轴双毛细管，可实现散装溶液7的亚相交换。保持垂滴的毛细管由两个同轴毛细管组成，这两个毛细管独立连接到双显微注射器的每个通道。每个微量注射器可以独立运行，允许通过通流7交换掉落的内容物。因此，亚相交换包括用内毛细管同时注入新溶液，以及使用相同的流速用外毛细管提取本体溶液。该过程允许更换本体溶液，而不会干扰界面区域或液滴的体积。该程序后来升级为多亚相交换，允许液滴本体溶液8的多达8次顺序亚相交换。这可以通过依次将散装溶液与模拟不同隔室（口腔、胃、小肠）的人工培养基交换，模拟悬浮在脂质介质中的单个水滴中的消化过程。整个设置如图 3所示，包括组件的详细信息。微量注射器中的注射器连接到八个通孔阀，每个通孔阀连接到装有人工消化液的微量离心管，其组件如图 2所示。

总之，在悬滴中实施的实验设计以模拟单个液滴中的体外消化，允许测量当消化过程依次应用于初始界面层10时累积效应和协同作用。每种消化介质的组成可以很容易地调整，以解释消化条件的特殊性，包括胃肠道病理或婴儿消化介质14。然后，鉴定影响蛋白水解和脂肪分解的界面机制可用于通过乳液的界面工程调节消化。获得的结果可用于设计具有定制功能的新型食品基质，例如低过敏性、控制能量摄入和降低消化率15，16，17，18，19。
