Bacteriocinen zijn antimicrobiële peptiden geproduceerd door een breed scala van bacteriële species 1 , 2 . Deze verbindingen en hun producenten, met name LAB, zijn al decennia wereldwijd verkend en geëxploiteerd voor hun mogelijke toepassingen in voedselbehoud en medicijnen 3 . Verschillende bacteriocinen zijn bekend om belangrijke pathogenen te doden, waaronder soorten Listeria, Enterococcus, Staphylococcus en Bacillus . Sommige bacteriocinen hebben zelfs de mogelijkheid om de immuunrespons 4 te moduleren. Veel bacteriocinen hebben relatief smalle spectra, een eigenschap die in sommige toepassingen zeer gewaardeerd wordt.
